Tempeh (Nacho Style) Mince - Serves 4 Adults 

This Vegan Tempeh Mince is fabulous. Serve it with Corn Chips, Guacamole, marinated peppers, chillis, coriander, vegan cheese, vegan mayonnaise, stuffed into Tacos or even wrapped into a Filo Pastry. The options are endless, Enjoy!!

Ingredients:   

500 gm of small diced or grated Tempeh (Click below for our Tempeh), Sesame/Rice Bran/Sunflower Oil (depending on your preference), 1 large diced Brown Onion, 3 – 4 cloves chopped Garlic, 2 – 3 dried Chillies, 2 tsp ground Cumin, 1 tsp Onion Powder, 1 tsp Garlic Powder, ½ tsp Smoked Paprika, ¼ tsp Cayenne Pepper, 2 cans chopped Tomatoes.                               

               

Method:

1.Heat up a pan with a little water inside and add the Tempeh, allow to steam/simmer for 10 minutes (this helps round out the Tempeh’s flavour and allows it to take on all the flavour of the spices and sauce). Allow to drain in a sieve


2.Add the oil to a large thick based fry pan or a wok and gently fry the Tempeh and Onion until it starts to take on a golden colour, stirring regularly to avoid sticking


3.Add Garlic and Spices and cook until fragrant (3 – 4 mins)


4.Add Tomatoes and allow to gently simmer and thicken to a sauce consistency (15 – 20 mins)


5.Season with salt and pepper (or a little Tamari for a nice depth of flavour)


6.There are so many other wonderful additions you can add to this dish to adapt it to your taste, try adding some Red Kidney Beans, Sweetcorn, chopped Spring Onions, diced Peppers at the end of cooking to create some extra crunch and some chopped fresh Coriander or Italian Parsley on top. Yum!!

Fried Tempeh (Tempeh Goreng)

In Indonesia, they grow soya beans and have a warm climate for fermentation. Tempeh has therefore become a major part of the local diet, especially in Java and it seems no tempeh recipe list would be complete without a recipe for Tempeh Goreng.

Ingredients:

300g Fiercely Fine Tempeh

2-3 cloves garlic

1 teaspoon salt

1 teaspoon coriander seeds

cup of water (can be flavoured with 1 teaspoon tamarind if available)

10 tablespoons sunflower oil


Method:

  1. Slice the tempeh in thick slices. Then score both sides with criss-cross shapes with a sharp knife.

  2. Crush the garlic and coriander seeds, mix with the salt. In a bowl add these to the water and mix. Then soak the tempeh in this for 5 mins. 

  3. Heat the cooking oil, then fry the tempeh until golden brown. Eat as a snack with a dip or as an accompaniment to a curry.
